Peanut Butter Oatmeal Balls

Munchkin and I made these treats together last week and they were amazing! Somewhere between candy, cookie, and granola bar, these chewy little truffles are packed with protein and fiber and make a great healthy snack, while feeling like dessert! Everyone we shared them with couldn't get enough of them! The original recipe called for the balls to be rolled in coconut flakes (which I LOVED!), but since Munchkin doesn't care much for coconut, we rolled most of the balls in crushed graham cracker crumbs and they were delicious that way too!

Peanut Butter Oatmeal Balls
Makes 40-50

1 1/2 cups Old Fashioned Oats, ground in a food processor
1/2 cup peanut butter (you can also use almond, cashew or sunflower butter)
1/2 cup honey
1/2 cup coconut flakes, unsweetened or 1/2 cup graham cracker crumbs

1. Place the oats in a food processor or blender and pulse until finely ground.
2. Stir the peanut butter and honey in a bowl until thoroughly combined.
3. Add the ground oats and continue to stir until thoroughly combined.
4. Using 1 teaspoon of the mixture at a time, roll into little balls.
5. Place the coconut or graham cracker crumbs in a separate bowl and roll the balls in either to completely cover.
6. Serve cold or at room temperature; store leftovers in the fridge for up to a week.
