Funfetti Waffles

Funfetti cake is aways a favorite in our family. Although it's really nothing more than a regular vanilla cake with sprinkles added, those bits of rainbow color throughout each bite seems to make it taste that much better! When making a quick batch of weekend waffles last week, I decided to turn them into Funfetti waffles by adding some extra vanilla flavor and a dash of little heart sprinkles to each one. We all enjoyed more than our fair share, dipping each bite into sweet whipped cream!

Funfetti Waffles
Makes 12

2 eggs
1 3/4 cups milk
1 teaspoon vanilla
3 tablespoons oil
2 1/4 cups all-purpose flour
4 teaspoons baking powder
heart sprinkles

1. in a large mixing bowl whisk eggs, milk, vanilla, and oil until well mixed
3. add flour and baking powder and whisk together until just combined
4. place 2/3 cup of batter at a time in a preheated, greased waffle iron, sprinkle 1/2 teaspoon of sprinkles on top of each waffle, close lid and cook until it stops steaming (about 5 minutes)
5. remove waffles and continue using the rest of the batter in the same way
6. serve hot topped with sweetened whipped cream!
