Turkey and Swiss Pesto Panini

With hot weather finally here, I'm turning to easy foods for dinner that don't involve heating the oven. These sandwiches were amazing! The crispy bread, the melty cheese, and the flavorful pesto made a perfect combination and they were ready in five minutes... you've gotta try them!

Turkey and Swiss Pesto Panini
Serves 1

2 slices sourdough bread
2 thin slices turkey breast
2 slices Swiss cheese
2 tablespoons pesto (try this spinach one!)

1. Spread pesto evenly on both pieces of bread.
2. Place both slices of cheese and both slices of turkey on top of one slice of bread, and top with the other.
3. Place in a panini press or on a grill pan (I used a George Forman grill) and cook until the outside is golden brown and the cheese is melted.
4. Cut in half diagonally and enjoy immediately!
