Macadamia Nut Pancakes with White Chocolate-Coconut Sauce

These pancakes took me back to Hawaii! Every bite tastes like macadamia nuts with a hint of coconut, while the warm sauce of white chocolate and coconut milk makes the perfect topping!  

Macadamia Nut Pancakes with White Chocolate-Coconut Sauce
Makes about 16 pancakes

2/3 cup macadamia nuts, plus more for garnish
2 cups flour
1/4 teaspoon salt
2 tablespoons baking powder
1 tablespoon brown sugar
2 tablespoons water
1/4 cup oil
2 eggs
1 1/2 cups coconut milk

1. In a small food processor, pulse the macadamia nuts until finely ground.
2. In  large bowl combine ground nuts, flour, baking powder, sugar, and salt, and whisk to combine.
3. In another bowl combine coconut milk, water, oil, and eggs and whisk to combine.
4. Add the wet mixture to the dry and stir gently until well incorporated.
5. Butter griddle or frying pan and using a 1/4 cup measuring cup drop batter on pan and cook until golden brown on both sides and cooked through.
6. Garnish with a sprinkle of chopped nuts and serve warm with white chocolate-coconut sauce or homemade coconut syrup and enjoy!

White Chocolate-Coconut Sauce
3/4 cup coconut milk
2 cups white chocolate chips

1. In a double boiler on low heat, melt the chocolate with the coconut milk, whisking together until completely smooth.
2. Serve hot or cold. (Keeps refrigerated for up to a week.)
