Watermelon-Strawberry Agua Fresca

After seeing Agua Fresca at Whole Foods, I did a little research on what exactly it was and couldn't wait to try my own version! Sort of a cross between a smoothie and flavored water, this drink is sweet, fruity, and SO refreshing on a hot summer day! I whipped up a pitcher of this watermelon-strawberry version recently and my family gulped it down in huge icy glassfuls!

Watermelon-Strawberry Agua Fresca
Serves 4

2 cups sparkling mineral water
1/4 cup sugar
8 mint leaves, plus more for garnish
1 pint strawberries, hulled
4 cups of watermelon, cut into cubes
1 1/2 tablespoons lemon juice

1. In a blender or food processor combine strawberries, watermelon, and mint and puree until smooth.
2. In a pitcher combine sparkling water, lemon juice, and sugar and stir to dissolve.
3. Pour watermelon and strawberry puree though a fine mesh strainer into the pitcher and stir to combine.
4. Garnish with torn mint leaves and serve over ice!
