White Pizza with Asparagus and Mushrooms

This pizza has a delicious, garlic white sauce that perfectly complements the flavor of the mushrooms and roasted asparagus. When we visited Rome, we often enjoyed pizza like this for a light midday lunch. Now we enjoy making this version ourselves for a summer dinner with a fresh green salad on the side.

White Pizza with Asparagus and Mushrooms
Serves 4-6

1 pound of pizza dough

8 ounces mushrooms, sliced
8 ounces asparagus tips, trimmed
1 cup grated Parmesan cheese
1 cup grated mozzarella cheese

1 tablespoon butter
1/2 tablespoon flour
3/4 cup milk
1/4 teaspoon onion powder
clove garlic, minced
1/3 cup Parmesan
freshly cracked black pepper

1. In a medium saucepan melt butter, stir in flour and cook until dry and bubbly, then add garlic and onion powder, whisk together and cook for another minute.
2. Add milk and simmer until mixture begins to thicken, about 5 minutes.Then stir in Parmesan and add freshly cracked black pepper to taste. Set sauce aside to cool slightly as you prepare other ingredients.
3. In a frying pan saute mushrooms in a little butter until lightly browned but not tender, then set aside. Then add asparagus to the pan and saute until slightly tender but not soft, and set aside.
4. Roll out pizza dough on a lightly floured surface and transfer to a greased baking sheet or pizza stone.
5. Spoon sauce evenly across the dough, spreading it with the back of the spoon to the very edge of the crust.
6. Sprinkle shredded Parmesan evenly across the entire top of the crust, place asparagus and mushrooms evenly all over the top of the cheese layer, then sprinkle the grated mozzarella over the top of everything.
7. Bake at 425 degrees for 10-15 minutes, or until crust is golden brown and cheese is melted and bubbly.
