Cinnamon Avocado-Banana Bread

With a bunch of ripe avocados and bananas that needed to be used, I saw a recipe on Babble and had to try it, with the addition of cinnamon. This recipe has it all nutritionally; whole wheat flour, honey instead of sugar, a fruit, and a veggie inside! It's also perfect for anyone with a dairy or egg allergy because it's completely vegan. I made jumbo muffins and then cut them in half and spread them with butter for the munchkins and they both gobbled them right up!

Cinnamon Avocado-Banana Bread
Makes 1 loaf, 6 jumbo muffins, or 8 mini loaves

2 cups whole wheat flour
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
2 avocados
2 bananas
3/4 cup honey
1 tsp vanilla extract

1. Preheat oven to 350 degrees. In a medium bowl combine the flour, baking powder, salt, and cinnamon and set aside.
2. Puree the avocado and banana in a food processor until smooth.
3. Add honey, vanilla extract, and avocado-banana puree to the flour mixture and stir until combined.
4. Spoon into greased muffin or mini loaf pans and bake for 25-30 minutes (or 1 hour for a full-size loaf), until a toothpick comes out clean.
