This savory pumpkin polenta is the perfect winter side dish to ham or roasted chicken! You can make it ahead of time and just thin with chicken broth and stir with a whisk while reheating over medium heat before serving.
Savory Pumpkin Polenta
2 1/2 cups milk
2 cups water
3/4 cup canned pumpkin
1 1/4 teaspoons salt
1 1/4 cups dry polenta
1 cup (4 ounces) Parmesan cheese, grated
2 tablespoons cream cheese, softened
1. In a medium saucepan, bring milk and water to a boil, over medium heat.
2. Stir in polenta, pumpkin, and salt, reduce to a simmer and stir with a whisk occassionally for about 30 minutes, until thickened.
3. Remove from heat, stir in cream cheese and Parmesan until melted, and serve immediately.
