Carrot-Apple-Coconut Muffins

I made these moist, delicious muffins from Weelicious for the Munchkins breakfast this morning! They're just sweet enough, are packed with both fruit and a veggie, and taste delicious! My 3 1/2 year old and 16 month old gobbled them right up!

Carrot-Apple-Coconut Muffins
Makes about 28 mini muffins

1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup coconut flakes
1 apple, peeled and grated
2 carrots, peeled and  grated finely
2 eggs
1 teaspoon vanilla extract
1/3 cup milk
1/4 cup oil
1/2 cup honey

1. Preheat oven to 350 degrees.
2. In a bowl, combine first 7 ingredients.
3. In another bowl combine remaining 5 wet ingredients, then slowly add this mixture to the dry ingredients, stirring gently until mixed.
4. Scoop by tablespoonfuls into greased mini muffin pans and bake for 13-15 minutes. Remove from pans while still hot, allow to cool slightly, and enjoy!
