Couscous

The first time I made couscous, I was a little shocked at how fast Munchkin and Baby Munchkin shoveled it in! I don't know why I was surprised though; who wouldn't love this moist, flavorful dish?! It's the perfect accompaniment to my Moroccan Pot Roast (or any kind of saucy stew!) and only takes 5 minutes to make! I like to use chicken broth instead of water when cooking my couscous to add extra flavor and protein!

Couscous
Makes 2 cups

1 cup couscous
1 1/4 cups chicken broth
1 tablespoon butter
salt and pepper to taste

1. In a medium saucepan, bring broth, butter, salt and pepper to a boil.
2. Stir in couscous, remove pan from heat, and cover.
3. Let stand 4-5 minutes and fluff with a fork right before serving.
