Cake Batter craze continues! I saw this amazing recipe for Cake Batter Fudge from Pursuit of Hippiness and couldn't wait to try it! Each little square is rich, creamy, and full of colorful birthday sprinkles. Be sure to chill it overnight before cutting into squares and keep it chilled until right before serving so it will stay nice and firm!
Funfetti Cake Batter Fudge
1 can (14 ounces) sweetened condensed milk
3 1/2 cups white chocolate chips
3 teaspoons vanilla extract
1/2 teaspoon almond extract
jar of rainbow sprinkles
1. Pour milk and white chocolate chips into a double boiler over low heat.
2. Heat for 2-3 minutes, or until white chocolate is completely melted and mixture is blended and smooth. Don't overheat!
3. Remove from heat, immediately add vanilla and almond extract, and combine thoroughly. Add a handful of rainbow sprinkles and fold in quickly (they will immediately start to melt and if stirred for too long they’ll turn the fudge an ugly muddy color).
4. Quickly pour into a foil lined 11x7 glass baking dish, shake more sprinkles on top, and chill in the refrigerator overnight until firm enough to cut. Cut into 1 inch squares and enjoy!
