'Lucky' Orange Cupcakes with Orange Buttercream Frosting

Munchkin and I made these cupcakes to share with her buddies at church for their St. Patrick's Day party. Because I have a ton of fresh oranges from my grandparents, I adapted the recipe for my Vanilla-Lemon Cupcakes, added a fresh tasting orange buttercream frosting, and sprinkled on some Lucky Charms just for fun! They were a cute and tasty hit with the kids as well as the grown-ups!

'Lucky' Orange Cupcakes with Orange Buttercream Frosting
Makes 24

1 1/2 cups sugar
1 tablespoon orange zest (about 3 oranges worth)
8 tablespoons (1 stick) unsalted butter, softened
1 1/4 cups whole milk
1 teaspoon vanilla extract
2 eggs
2 1/4 cups flour
1 tablespoon baking powder
1/4 teaspoon salt

1. Preheat oven to 350 degrees and fill muffin pans with cupcake papers
2. Beat butter, sugar, and orange zest until light and fluffy (several minutes)
3. In a small bowl, whisk together milk, vanilla, and eggs and set aside.
4. Add flour, baking powder, and salt to the butter mixture and beat to combine.
5. Add milk mixture and beat for about 2 minutes to until completely smooth and light.
6. Scoop batter into cupcake papers and bake for 20-25 minutes, until a toothpick comes out clean.
7. Remove from pans and cool completely before topping with frosting.

Orange Buttercream Frosting
1/3 cup butter, softened
3 cups powdered sugar
1 tablespoon orange zest (about 3 oranges worth)
1 1/2- 2 tablespoons fresh squeezed orange juice

1. Beat all ingredients together until smooth and creamy, with no lumps left. Add more orange juice to thin or more powdered sugar to thicken until desired consistency is reached.
2. Frost cooled cupcakes and top with Lucky Charm marshmallows to decorate! :)
