Coconut- Lime Sugar Cookies

"You put da lime in the coconut and drink 'em both up..." I had the Kermit the frog version of this song stuck in my head the whole time I was making these cookies. Lime and coconut are such a perfect combination and summer is the perfect time to enjoy them! These really are the perfect sugar cookie, soft and chewy inside with just a hint of crunch on the outside. The addition of lime and coconut takes the flavor to a whole new level and each bite will make you feel like you're vacationing on a tropical island!

Coconut- Lime Sugar Cookies
Makes 3 dozen

1/2 cup shredded coconut
2 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups and 1/3 cup sugar, divided
2 ounces cream cheese
3/4 cup butter, melted
1 egg
1/2 teaspoon vanilla extract
zest of one lime
juice of one lime (about 3 tablespoons)

1. Preheat oven to 350 degrees and place parchment paper on a baking sheet.
2.  In a small food processor, pulse the shredded coconut until it is finely ground. Add to a large bowl along with flour, baking soda, baking powder, and salt, stir together and set aside.
3. In the bowl of a mixer, add 1 1/2 cups sugar and the zest of one lime. Rub the zest into the sugar until fragrant.
4. Add cream cheese and melted butter to the sugar/zest mixture and beat until fluffy.
5. Add egg, vanilla, and lime juice to the butter/sugar mixture and beat until combined.
6. Add dry ingredients a little at a time, stirring gently into the wet ingredients until completely incorporated. Don't over mix!
7. Place the remaining 1/3 cup sugar in a shallow dish. Scoop dough into balls and roll around in the sugar, before placing on prepared baking sheet about an inch and a half apart.
8. Bake at 350 for 8-10 minutes. Allow to cool on the baking sheet for 2 minutes before transferring to a cooling rack. Store in an airtight container with a piece of bread to keep them soft for up to a week or enjoy them immediately!
