Moroccan Spiced Carrots

I love the many different flavors in this dish! Sweet carrots, smokey cumin, and spicy cayenne pepper meld together to create a delicious Moroccan vegetable dish that perfectly accompanies my Moroccan Pot Roast and makes a unique and scrumptious addition to any meal! 

Moroccan Spiced Carrots
Serves 4

1 pound carrots, cut into 1/4 inch slices
1 teaspoon minced fresh garlic
2 tablespoons olive oil
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1 teaspoon sugar
dash cayenne pepper
1/2 teaspoon dried parsley
4 teaspoons freshly squeezed lemon juice

1. Steam carrots until almost tender, drain, and set aside.
2. Add olive oil and garlic to a skillet and saute for 1 minute until fragrant, then add cumin, cinnamon, sugar, and cayenne pepper and stir to combine.
3. Add steamed carrots and stir gently to coat each carrot with the spice mixture, allowing the sugar to caramelize a bit.
4. Stir in lemon juice, parsley, salt and pepper to taste, and ensure carrots are tender before serving.
