Strawberry Yogurt Parfaits


I made these cute and tasty parfaits for a friend's baby shower. Served in little clear plastic cups, or wine glasses, you can see all the pretty layers of creamy vanilla yogurt, sweet strawberry-honey puree, and crunchy granola. The ladies loved them and so did my toddlers!

Strawberry Yogurt Parfaits
Makes 8 small or 4 large 

1 pint of strawberries, washed and hulled
1/4 cup honey
24 ounces vanilla yogurt
several cups cinnamon almond granola (try this easy and delicious homemade version!)

1. In a small food processor, combine the washed and hulled strawberries with the honey and pulse until you reach desired consistancy.
2. Set out 8 clean, small glasses and begin to layer your ingredients; first yogurt, then granola, then yogurt, then strawberry puree, and finally yogurt again. Be sure you spread the granola and strawberry puree layers all the way to the sides of the glass or the yogurt will cover them and you won't see any of the layers.
3. Top with a slice of strawberry, a raspberry, or a bluberry and chill until ready to serve, up to an hour ahead of time. (You can wait longer than on hour, but the granola will not be as crunchy.) Enjoy!
