Healthy Eggnog Oatmeal Mini-Muffins
I recently had a chance to receive several different boxes of Better Oats Oatmeal to sample and to create a recipe using their product! Some of the flavors we got to try were MMM... Muffins Blueberry Muffin, Pomegranate, RAW Pure & Simple, Apples and Cinnamon, and Oatmeal Raisin Cookie. Both of my toddlers loved the flavors, especially the blueberry muffin one (it really tasted like sweet, fresh blueberry muffin!), and I loved that they were getting a healthy serving of whole grains and flax for breakfast! On my shopping list to try next is the chai and chocolate versions! Yummy!!

Healthy Eggnog Oatmeal Mini-MuffinsMakes 2 dozen mini-muffins
2 packets (1 cup) Better Oats RAW Organic Pure and Simple
1/4 cup sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups non-fat eggnog
1 egg, beaten lightly
1/2 cup applesauce
1 cup all-purpose flour
2 teaspoons baking powder
1. Preheat oven to 375 degrees and grease mini-muffin pan or line with muffin liners.2. In a small food processor, combine oatmeal, sugar, salt, cinnamon, and nutmeg and pulse until finely ground.
3. Combine eggnog and oat mixture in a bowl and soak for 10 minutes.
4. Add beaten egg and applesauce and stir to combine.
5. Gently stir flour and baking powder into the wet ingredients until just combined.
6. Spoon batter into prepared muffin cups until 2/3 full.
7. Bake for 15 minutes, or until a toothpick inserted in the center comes out clean, and enjoy warm!
