Turkey, Fontina, and Cranberry Panini

 
Wondering what to do with all those holiday leftovers? I have just the recipe for you! These tasty grilled sandwiches are full of roasted turkey, salty melted cheese, and a spread of sweet/tart cranberry sauce! Hot, crispy, and delicious, these flavors are a match made in heaven!
 
Turkey, Fontina, and Cranberry Panini
 
thinly sliced turkey breast (Holiday leftovers are perfect!)
sliced Fontina cheese
sliced bread (we used Buttermilk and Sourdough- both were delicious!)
cranberry sauce (canned or homemade will work!)
 
1. Spread cranberry sauce on one side of one slice of bread.
2. Using a panini grill, or in a buttered pan over medium heat, layer the sandwich; first bread (cranberry side up), then sliced turkey, then cheese, and finally bread.
3. Cook over medium heat, pressing down gently as it cooks, until golden brown.
4. Carefully flip over and cook the other side until the bread is golden brown on both sides and the cheese is melty.
5. Cut in half with a sharp knife and serve immediately!
