Healthy Peanut Butter- Banana Mini Muffins


These soft muffins are full of delicious peanut butter flavor with just the right touch of banana! Made in mini muffin size, they're a great toddler snack or breakfast! Just throw a few in a baggie and you've got a yummy and healthy snack to go for yourself or your little one, or split them in half and spread with jelly for a tasty PB&J twist.

Healthy Peanut Butter- Banana Mini Muffins
Makes 30

2 ripe bananas, mashed
1 egg, beated
1/3 cup brown sugar
1/3 cup melted butter
1/2 cup milk
1/2 cup peanut butter
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder

1. Preheat oven to 400 degrees and grease mini muffin pan.
2. Beat together bananas, egg, sugar, butter, milk, and peanut butter until smooth.
3. Add flour, salt, and baking powder and mix until just combined. (Don't overmix!)
4. Spoon into prepared muffin pans and bake for 13-15 minutes, or until tops are dry and a toothpick inserted comes out clean.
