Coconut Macaroon Bird's Nests



After seeing these cute and tasty treats from Two Peas and their Pod last year, I had to make them for Easter! They make a perfect table decoration at each persons plate and are fun to make together as a family! Sweet and chewy coconut macaroons, shaped like birds nests, hold a dollop of Nutella and a couple egg shaped candies!

Coconut Macaroon Bird's Nests
Makes about 20

1 1/3 cups condensed milk (one 14 ounce can)
1 1/2 teaspoons almond extract
1 1/2 teaspoons vanilla extract
7 cups sweetened shredded coconut (three 7 ounce bags)
2 egg whites
1/2 teaspoon salt

1. Preheat oven to 325 degrees and cover a large baking sheet with parchment paper.
2. In a large bowl, stir together the milk, almond and vanilla extracts, egg white, and salt.
3. Add coconut and mix well.
4. Place large tablespoons of dough on the parchment covered baking sheet, poking a finger or two into the center of each one to form a nest shape.
5. Bake for 15-17 minutes until golden brown. After removing from the oven, press the center down again and allow to cool for 5 minutes on the baking sheet before gently transferring to a cooling rack to cool completely.
6. Once cookies are completely cool, fill the center of each one with a small spoonful of Nutella and top with one or two candy eggs.
7. Serve immediately or store in an air-tight container for 2-3 days! Enjoy!
