Asian Glazed Salmon

This is one of my absolute favorite ways to eat salmon! The blend of Asian flavors are incredible with the fish and I love the little crisp edges that it gets while baking. Pour the sauce left in the pan over rice, couscous, or stir fry vegetables for an extra special side dish and prepare to salivate! My 2 year old polished off an entire fillet herself and asked for more, so you may want to double the recipe. It really is that good- even the leftovers are incredible, cold the next day on salad!

Asian Glazed Salmon
Serves 4

4 salmon fillets (1 1/2- 2 pounds)

2 tablespoons olive oil
2 tablespoons sesame oil
4 tablespoons rice vinegar
4 tablespoons low-sodium soy sauce
2 tablespoons packed brown sugar
4 cloves of garlic, minced
1 teaspoon onion powder
1 teaspoon ground ginger
1 tablespoon sesame seeds
freshly cracked black pepper to taste

1. Combine the marinade ingredients in a glass baking dish and whisk to combine.
2. Add salmon, turning to coat both sides, cover, and allow to marinate in the fridge for several hours.
3. Preheat oven to 350 degrees, remove cover, and bake in the marinade for 15 minutes, until it flakes easy with a fork.
4. Broil for an additional 3-5 minutes, watching it closely, to get the tasty crisp top and enjoy!
