Pumpkin Spice and Browned Butter Rice Krispy Treats
Serves 12
3 tablespoons unsalted butter
1/4 cup pumpkin puree
1 (10 ounce) bag mini marshmallows
1/4 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
1/8 teaspoon salt
6 cups crispy rice cereal
1/4 cup white chocolate candy melts

1. Grease a 9x13 baking dish and set aside.
2. In a large saucepan, over medium heat, melt butter and allow to bubble until it begins to turn a golden brown color and starts to smell nutty.
3. Add the pumpkin puree and heat until warmed through.
4. Stir in marshmallows until completely melted, then mix in vanilla, cinnamon, nutmeg, cloves, and salt, and remove from heat.
5. Allow the marshmallow mixture to cool for 20 minutes or until it is at room temperature (if you don't, your rice crispy treats will be soggy.) then fold in cereal with a rubber spatula.
6. Pour mixture into the prepared baking dish, gently pressing down evenly, and allow to set for about 30 minutes before cutting into squares.
7. Melt white chocolate candy melts as directed on the package and drizzle a little over each square. Allow chocolate to harden, serve, and enjoy! :)
