Gingerbread- Cookie Butter Puppy Chow


We recently heard about Trader Joe's cookie butter and being intrigued, bought a jar to try. SO GOOD! As weird as it felt to be eating a paste of ground up cookies, the flavor was out of this world! I adapted my recipe for Nutella Puppy Chow and made this version the other day. It tasted like gingerbread puppy chow! The perfect snack for holiday parties!

Gingerbread- Cookie Butter Puppy Chow
Makes 6 cups

6 cups Chex cereal
1/2 cup butter (1 stick)
1 cup white chocolate chips
1/2 cup Speculoos Cookie Butter (I bought mine from Trader Joe's)
2-3 cups powdered sugar (more or less as needed to coat the cereal)

1. Measure out cereal into a large bowl and set aside.
2. In a double boiler, melt the butter and chocolate chips until smooth.
3. Remove from heat and stir in Cookie Butter until combined, then pour over cereal and toss gently with two forks until cereal is completely covered.
4. Sprinkle powdered sugar on top and toss again gently until cereal is coated in sugar and no longer sticky.
5. Spread out on parchment paper and allow to cool completely. Once cool, store in an airtight container or ziplock bag, or enjoy immediately!
