This healthy chili is the perfect meal to warm up with on a cold day! Deliciously spicy and satisfying, its packed with tons of protein from the quinoa! Simply throw the ingredients in the crock pot and a few hours later, sit down to a nutritious and delicious bowl.
Healthy Chicken Quinoa Chili
1 cup uncooked quinoa, rinsed
1 (28 ounce) can diced or crushed tomatoes, with liquid
1 (14 ounce) can diced tomatoes with green chilies, with liquid
2 (16 ounce) cans black beans, rinsed and drained
1 (15 ounce) bag frozen corn
2 1/2-3 cups chicken broth
3 cups chopped, cooked chicken breast
1 large red bell pepper, seeded and chopped
1 teaspoon onion powder
1 teaspoon minced garlic
1 teaspoon cumin
1 tablespoon chili powder
1. Put all ingredients into a crock pot or slow cooker, stir gently to combine, and cook on high for 4 hours or low for 6-8 hours.
2. Ladle into bowls and serve as is, or top with a sprinkle of shredded cheese and a spoonful of Greek yogurt.
