Gooey Chocolate Peanut Butter Chip Cookies


These cookies are a scrumptious, chocolate- peanut butter twist on my typical chocolate chip cookie recipe. We love eating them warm from the oven, when they're gooey and filled with little pockets of peanut butter from the melted chips. They taste like the cookie version of a Reese's Peanut Butter Cup! SO good!

Gooey Chocolate Peanut Butter Chip Cookies
Makes about 3 dozen

1 cup butter, at room temperature
1 cup brown sugar, packed
1/2 cup granulated sugar
2 eggs
1 1/2 teaspoons vanilla extract
3 cups flour
2 tablespoons cornstarch
1/2 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups peanut butter baking chips (I used Reese's brand)

1. Preheat oven to 350 degrees and cover baking sheets with parchment paper.
2. In a mixer, cream butter and sugars together until light and fluffy.
3. Beat in vanilla and eggs, one at a time, scraping down the sides of the bowl in between each one.
4. Add in flour, cornstarch, cocoa, salt, and baking soda and mix until just combined, then gently fold in peanut butter chips.
5. Using a cookie scoop, place walnut sized balls of dough onto prepared cookie sheets, 2 inches apart, and bake for 10-12 minutes.
6. Allow to cool on sheets for 5 minutes after coming out of the oven to firm up slightly, then remove to wire racks to cool completely.
7. Enjoy warm or store in an airtight container.

*Freezer friendly:  Flash freeze cookie dough balls in a single layer on cookie sheets until hard, then transfer them to a Ziploc bag and store in the freezer. Be sure to label the bag with the dough flavor, oven temperature, and bake time for your cookies. When you're ready to enjoy them, simply remove a few from the freezer, thaw, and bake as directed, or just add 2 minutes and bake them frozen!
