Caramel Stuffed Apple Cider Cookies

These caramel apple cookies are full of apple flavor (with just a hint of tartness!) and oozing with soft caramel in the center. Perfect for welcoming Fall weather! I made these last year for Halloween and have recreated them several times since. We like to warm them up for a few seconds before enjoying alongside a big mug of apple cider- they're too good to resist!

Caramel Stuffed Apple Cider Cookies
Makes 4 dozen cookies

1 cup unsalted butter, nearly melted
1 cup granulated sugar
1/2 teaspoon salt
1 (7.4 ounce) box Alpine Spiced Apple Cider Instant Original Drink Mix *Not sugar free*
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
3 cups all-purpose flour
1 (14 ounce) bag Kraft Caramels (unwrapped)

1. Preheat oven to 350 degrees and cover cookie sheets with parchment paper. (It has to be parchment paper for these cookies because of the caramel center so you can remove them from the sheet!)
2. Cream together butter, sugar, salt, and all 10 packets of apple cider mix until smooth and fluffy.
3. Beat in eggs and vanilla extract, then mix in the baking soda and baking powder.
4. Add the flour and mix until just combined.
5. With a standard cookie scoop, scoop the dough into a ball, scraping off the excess as you go up the bowl.
6. Flatten the dough slightly in your hand, place a caramel in the center, and work the dough around the caramel sealing well. Place the cookies two inches apart on the baking sheets.
7. Bake 12 to 14 minutes or until golden brown around the edges, then remove from oven and carefully slide the parchment with the cookies onto the counter.
8. Let cool until they are no longer soft but still slightly warm. Twist gently to remove, and cool the rest of the way upside down on the parchment or on a cooling rack and then store in an airtight container.

Notes: If cookies get too cool before you twist them off, freeze the whole sheet for a few minutes and they’ll come right off.
Also, if the caramel hardens after cookies have been stored, you can microwave them for a few seconds and the caramel will melt into gooey perfection once again!
